Castle & Key Experimental Series: White Port
Our Bourbon is known for its bold, structured spice; a confident backbone built from rye standing alongside the corn in the mash. For this Experimental Series release, we paired that structure with something bright and sun-warmed in its own right: White Port casks from Portugal, a tradition built on young, fortified wine aged just long enough to take on notes of dried fruit and honeyed gold.
Resting for 11 months, those casks left their mark. Threading notes of golden raisin, toasted cashew, and clove-studded orange through the bourbon's already spiced grain. The result is bright and a little nostalgic: green cardamom meeting stone fruit, brown butter giving way to something more lingering, like tobacco leaf and black cherry settling in at the finish. Two traditions, distinct in origin, finding a quiet and delicious accord.
This is a spirit worth sitting with, and for now, it's only available at Castle & Key. Releases July 11th. Available exclusively in the Boiler Room and at Castle & Key 502.
